Roughly chop the cherries and pistachios. Set aside.
In a large saucepan melt the butter on low heat.
Add brown sugar, honey, cinnamon, salt and vanilla.
When it starts to bubble add the cherries and pistachios to the mixture and stir well.
Then add the oats and mix until well coated.
Transfer the granola to a parchment covered baking sheet and allow to cool at room temperature.
Place in an airtight container to store.
