    Cherry Pistachio Granola - A Sweet and Delicious Healthy Snack

    Here's a simple cherry pistachio granola recipe that you will love to snack on or use as a tasty topping for yogurt or ice cream.

    I think sweet dark cherries might be my favorite summer fruit next to peaches. I also love pistachio nuts. They always remind me of my father who was a big fan of anything pistachio flavored.

    I often make a batch of my homemade granola with cranberries and pecans to bring on vacation but this year I mixed it up with cherries and pistachios.

    Ingredients for granola including dried cherries, pistachio nuts, oats, butter, brown sugar, cinnamon, and honey.

    How to Make Cherry Pistachio Granola

    Ingredients

    • 3/4 cup butter
    • 3/4 cup brown sugar
    • 1/8 cup honey
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla extract
    • 4 cups old fashioned oats aka rolled oats
    • 1.5 cups pistachios roughly chopped
    • 1.5 cups dried dark cherries roughly chopped
    Melting butter, brown sugar and honey in a large frying pan.

    Step 1 - Melt Butter and Sugars

    In a large pan melt the butter, brown sugar, and honey stirring together until they are combined and start to bubble.

    Adding dried cherries and pistachios to the butter and sugar mixture.

    Step 2 - Add in Fruit, Nuts, and Seasoning

    Add in the chopped cherries, pistachios, cinnamon, salt and vanilla. Stir well.

    Step 3 - Stir in Oats

    Finish by mixing in the oats until they are well combined.

    Step 4 - Remove to Parchment and Cool

    Remove the granola to a parchment lined baking pan to cool for a couple of hours.

    Store the granola in an airtight container. You can leave it out of the refrigerator for a few days but if you think it will be longer it wouldn't hurt to refrigerate, especially if its really hot. Honestly, mine never lasts for more than a few days.

    We like to top Greek yogurt with a little granola for a quick breakfast. It's also great on top of vanilla ice cream for a delicious dessert. However, it's really good all on its own as a nutritious snack.

    Finally, like so many of my posts, this granola makes great gifts. Just fill up some jars and tie on a ribbon for all your granola loving friends.

    Cherry Granola with Pistachios

    Here's a tasty pistachio cherry granola recipe that takes minutes to make and is perfect for snacking or topping your favorite yogurt.

    Ingredients
      

    • 3/4 cup butter
    • 3/4 cup light brown sugar
    • 1/8 cup honey
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla extract
    • 4 cups old fashioned oats
    • 1.5 cups pistachios roughly chopped
    • 1.5 cups dried dark cherries roughly chopped

    Instructions
     

    • Roughly chop the cherries and pistachios. Set aside.
    • In a large saucepan melt the butter on low heat.
    • Add brown sugar, honey, cinnamon, salt and vanilla.
    • When it starts to bubble add the cherries and pistachios to the mixture and stir well.
    • Then add the oats and mix until well coated.
    • Transfer the granola to a parchment covered baking sheet and allow to cool at room temperature.
    • Place in an airtight container to store.

    Notes

    Substitutions and Additions
    You can easily substitute maple syrup for honey
    Use different combinations of nuts and seeds to create your own blend.
    Almonds, sunflower seeds, pumpkin seeds, and flax seeds are just a few.
