In a mixing bowl, combine chicken, egg, salt, pepper, and 1/2 cup of the mozzarella cheese.
Set the chicken mixture onto an oil sprayed parchment lined baking sheet.
Spray another piece of parchment paper and place it on top of the chicken mixture, then use a small rolling pin to spread it out about 1/4 inch thick.
Remove the top piece of parchment paper and discard.
Then sprinkle panko breadcrumbs and parmesan cheese evenly over the chicken.
Bake the chicken at 425 degrees for 20 minutes.
Remove the baking tray from the oven and spread marinara on top, followed by the remaining 1/2 cup of shredded mozzarella cheese.
Place the chicken pizza under the broiler for a few minutes until the cheese is bubbly and starting to brown.
Remove and cut into pizza wedges.

Options and Substitutions:You can use a variety of shredded cheeses. I like a combo of mozzarella and provolone.You can use Italian breadcrumbs with parmesan cheese already in the mix.You can use any marinara or jarred pizza sauce. Or make your own with tomato sauce and Italian seasoning. Also consider a white pizza with an olive oil and garlic sauce.You can add other toppings. However, I would cook them first.
