    Chicken Parm Pizza

    Enjoy this chicken parm pizza that gives you the taste and feel of pizza while being high in protein and very low in carbs.

    Have you ever heard of a "Meatzza?" It's a meat-crust pizza with no flour and no dough, resulting in extra protein and hardly any carbs.

    How to Make Chicken Parm Pizza

    Step 1. Make the crust by combining ground chicken, an egg, salt, pepper, and shredded cheese.

    Step 2. Place the chicken mixture onto a parchment lined baking tray that has been sprayed with cooking oil.

    Step 3. Spray another sheet of parchment to cover the tray and roll it out thinly. I used the jar of marinara sauce because my rolling pin is too large to fit inside my baking pan.

    Step 4. Remove the top sheet of parchment.

    Step 5. Sprinkle a little panko breadcrumbs and some parmesan cheese all over the crust.

    Step 6. Bake the crust in a hot oven (425°) until golden.

    Step 7. Remove the pan from the oven and top it with marinara sauce and more shredded cheese.

    Step 8. Set the pizza under the broiler for a minute or two until the cheese is golden and bubbly.

    Cut it into eight slices and enjoy.

    This was maybe even better than I expected. I would definitely make it again. Next time, I'd like to add more toppings, such as mushrooms or fresh basil.

    Chicken Parm Pizza

    Make a chicken parmesan pizza with ground chicken for a tasty, low-carb, high protein dinner.

    Ingredients
      

    • 1 pound ground chicken
    • 1 cup shredded mozzarella cheese divided
    • 1 egg
    • 1/4 teaspoon salt
    • 1/8 teaspoon black pepper
    • 1/4 cup Panko breadcrumbs
    • 1 tablespoon parmesan cheese
    • 1/2 cup marinara sauce

    Instructions
     

    • In a mixing bowl, combine chicken, egg, salt, pepper, and 1/2 cup of the mozzarella cheese.
    • Set the chicken mixture onto an oil sprayed parchment lined baking sheet.
    • Spray another piece of parchment paper and place it on top of the chicken mixture, then use a small rolling pin to spread it out about 1/4 inch thick.
    • Remove the top piece of parchment paper and discard.
    • Then sprinkle panko breadcrumbs and parmesan cheese evenly over the chicken.
    • Bake the chicken at 425 degrees for 20 minutes.
    • Remove the baking tray from the oven and spread marinara on top, followed by the remaining 1/2 cup of shredded mozzarella cheese.
    • Place the chicken pizza under the broiler for a few minutes until the cheese is bubbly and starting to brown.
    • Remove and cut into pizza wedges.

    Notes

    Options and Substitutions:
    You can use a variety of shredded cheeses. I like a combo of mozzarella and provolone.
    You can use Italian breadcrumbs with parmesan cheese already in the mix.
    You can use any marinara or jarred pizza sauce. Or make your own with tomato sauce and Italian seasoning. Also consider a white pizza with an olive oil and garlic sauce.
    You can add other toppings. However, I would cook them first.
