In a large heavy saucepan heat the honey, pepper flakes, and hot sauce.
When the mixture starts to simmer around the edges, turn down the heat and let the ingredients infuse for 20 minutes stirring occasionally.
Remove the pan from the heat and let it sit for a few more minutes.
Strain out the pepper flakes using a fine mesh strainer into a pouring cup or a flexible plastic container.
Pour into clean jars.
Attach a label and tie on a wooden honey stick with a ribbon or piece of twine.
