Loaded Potato Bites
This yummy loaded potato bites appetizer is easy to make and is paired with a dip to round out the dish.

3 pounds russet potatoes 1 pint sour cream 1/3 cup chives, finely chopped 1 package finely chopped cooked bacon 3.25 oz ~ 2/3 cup 2 cups sharp cheddar cheese, finely shredded 2 tablespoons butter 1/4 cup milk salt and pepper to taste 2 tablespoons olive oil for frying
Peel, cut, and boil potatoes until soft.
Mash potatoes with butter and milk.
Add cooked bacon and cheese to mashed potatoes. Set in the refrigerator for 30 minutes.
Mix sour cream and chives together for dip. Cover with plastic and refrigerate until ready to serve.
Remove potato mixture from refrigerator.
Heat a non-stick pan on medium-high heat with a little olive oil.
Use a cookie scoop or small spoon to make small discs with the potato mixture.
Fry in a pan for 2-3 minutes on each side or until golden brown.
Remove to a plate with paper towels to cool.
Continue until all potato bites are cooked.
Cover with foil and keep warm or serve immediately.
