Stuffed Pepper Soup

1 pound ground beef 1 tablespoon olive oil 1 onion diced ~ 1.5 cups 2 green bell peppers diced ~ 2 cups 28 oz. can of diced tomatoes 1 quart of beef broth 1 cup of uncooked long grain rice salt and pepper to taste
Saute onions in olive oil for a few minutes.
Add ground beef, salt, and pepper.
Once the beef is browned through, add the peppers, tomatoes, and beef broth.
Bring to a boil.
Add rice and reduce heat to low, cover the pot and simmer for 35 - 40 minutes.
