Zucchini Latkes

Ingredients
  

  • 1 cup grated zucchini
  • 1/2 cup panko bread crumbs
  • 1 egg
  • 1/4 cup olive canola, or vegetable oil
  • sprinkle of salt and black pepper
  • 1 teaspoon Parmesan cheese
  • 1/2 teaspoon garlic powder

Instructions
 

  • Drain and blot grated zucchini with towels to remove excess liquid.
  • Combine zucchini, bread crumbs, egg, salt, pepper, Parmesan cheese, and garlic powder in a large bowl. Stir well.
  • Heat oil in a large skillet or frying pan on medium high heat.
  • Divide the vegetable mixture into four equal amounts.
  • Make a patty with your hands and gently lower it into the hot oil.
  • Cook for 1-2 minutes or until browned and flip.
  • Repeat with the other side.
  • Remove to paper towels to blot up excess oil.
  • Serve with sour cream.
