Zucchini Latkes

1 cup grated zucchini 1/2 cup panko bread crumbs 1 egg 1/4 cup olive canola, or vegetable oil sprinkle of salt and black pepper 1 teaspoon Parmesan cheese 1/2 teaspoon garlic powder
Drain and blot grated zucchini with towels to remove excess liquid.
Combine zucchini, bread crumbs, egg, salt, pepper, Parmesan cheese, and garlic powder in a large bowl. Stir well.
Heat oil in a large skillet or frying pan on medium high heat.
Divide the vegetable mixture into four equal amounts.
Make a patty with your hands and gently lower it into the hot oil.
Cook for 1-2 minutes or until browned and flip.
Repeat with the other side.
Remove to paper towels to blot up excess oil.
Serve with sour cream.
