    Hawaiian Chicken Sheet Pan Dinner

    This Hawaiian chicken sheet pan meal is sweet and tangy. A great any-day-of-the-week easy dinner for the family.

    This sheet pan recipe is a good one because the flavor is fantastic, it's fast and easy to make, and typically leaves us with leftovers.

    Ingredients including chicken breast, peppers, onions, pineapple, lemon juice, garlic, spices, honey and pineapple juice.

    Ingredients

    • chicken breast (boneless, skinless)
    • pineapple chunks
    • red onion
    • red and yellow bell peppers 
    • honey
    • lemon juice
    • pineapple juice
    • ground ginger
    • salt and black pepper

    Making Hawaiian Chicken Sheet Pan Dinner

    Step 1. Cut up the chicken, pineapple, and veggies into bite sized pieces.

    Step 2. Whisk together the liquids and spices for the sauce in a separate bowl.

    Step 3. Combine the cut-up chicken, vegetables, and pineapple with the sauce in a mixing bowl and toss well.

    Step 4. Spread everything out onto a sheet pan (rimmed baking sheet) in one layer.

    Step 5. Bake for 20 minutes, stir, and continue baking for an additional 20 minutes.

    Step 6. Place the pan under the broiler for 5 minutes to brown. (optional)

    Step 7. Pour everything into a serving bowl.

    Serve with rice and use a spoon to add some of the sauce.

    Store any leftovers in an airtight container in the refrigerator for a few days.

    Options and Substitutions

    • Use boneless, skinless chicken thighs. (they may take a little longer to cook)
    • I used fresh pineapple, but you can use canned pineapple.
    • Use yellow or white onions instead of red onions.
    • Substitute fresh garlic and fresh grated ginger instead of powdered garlic and ground ginger.
    • Substitute brown sugar for the honey or leave it out.
    • Add a touch of teriyaki or soy sauce.
    • Use different bell peppers, such as green and/or orange bell peppers.
    • Keep it lower in carbs and use cauliflower rice

    This fast and easy Hawaiian chicken dinner is sweet and tangy. Serve it over rice for a delicious any day meal.

    • Sheet Pan

    Ingredients
      

    • 1.5 pounds chicken breast meat
    • 1 pound pineapple
    • .5 red onion ~ 1 cup
    • 1 large red bell pepper
    • 1 large yellow bell pepper

    Sauce

    • 2 tablespoons honey
    • 1/3 cup lemon juice
    • 1/3 cup pineapple juice
    • 1 teaspoon ground ginger
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon red pepper flakes
    • 1 teaspoon garlic powder

    Instructions
     

    • Preheat oven to 375 degrees
    • Chop the chicken, peppers, onion, and pineapple into similar bite sized pieces.
    • Whisk all the ingredients for the sauce together in a small bowl.
    • Toss the sauce with the chicken, veggies, and pineapple in a large bowl.
    • Spread everything onto a sheet pan in a single layer.
    • Bake in a 375 degree oven for 20 minutes.
    • Remove and stir everything around, then bake for an additional 20 minutes.
    • Place the pan under the broiler for 5 minutes to brown if desired.
    • Remove and serve over rice.
