Celebrate St. Patrick's Day in style with this traditional Colcannon cabbage recipe. It's a great side dish that's easy to make and will pair well with all your favorite dinners.

I love the taste of sauerkraut on mashed potatoes, so when I heard about Colcannon, a traditional Irish potato dish made with cabbage, I thought it would be fun to try.
It was so delicious!! Interestingly, it tasted much like the filling of pierogi, a very popular dish here in Pittsburgh.

Ingredients
- starchy potatoes like Yukon Gold
- butter
- green cabbage
- scallions (green onions)
- half & half or cream
- salt
- black pepper

How to Make Colcannon
Step 1. Peel, chop, and boil the potatoes in a large saucepan.
Step 2. While the potatoes are cooking, saute scallions (white ends) with salt & pepper, in 3 tablespoons of butter in a frying pan on medium heat.

Step 3. Add the cabbage and saute it with the scallions and butter until wilted and starting to brown slightly. Approx. 5 minutes.

Step 4. Remove the cabbage mixture from the heat and add in 1/4 cup of the half and half.

Step 5. Once the potatoes are "fork tender" (meaning you can easily pierce them with a fork), drain and mash them with butter. Then mix in the remaining 1/4 cup of half and half.
Step 6. Combine the cabbage mixture with the mashed potatoes and top with chopped scallions (green parts).
Substituions:
- Any potato you like for making mashed potatoes works.
- Substitute other greens like kale for the cabbage.
- Use sweet onions, leeks, or chives instead of scallions.
- Whole milk or heavy cream can be used instead of half & half

This Irish colcannon recipe is so good. I will definitely be making this again. I might try it with a different green or other aromatics like chives and garlic.


Colcannon Cabbage Recipe
Ingredients
- 4 gold potatoes approx. 1.5 pounds
- 4 tablespoons butter
- 3 cups green cabbage chopped
- 1/2 cup scallions (green onions) white parts
- 2 tablespoons scallions - green ends as a garnish
- 1/2 cup half & half or cream divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Peel, chop, and boil potatoes for about 10-15 minutes until fork tender.
- Saute green onions, salt, and pepper in 3 tablespoons of butter in a large skillet on medium-high heat for about 5 minutes. at.
- Add the cabbage and cook until it wilts and starts to brown slightly. Remove from heat.
- Add 1/4 cup of half and half to the greens and stir.
- Drain and mash the potatoes with one tablespoon of butter. Add 1/4 cup of the half and half and stir.
- Combine the cabbage mixture with the mashed potatoes and transfer to a serving bowl. Garnish with chopped scallion greens.
