Celebrate St. Patrick's Day in style with this traditional Colcannon cabbage recipe. It's a great side dish that's easy to make and will pair well with all your favorite dinners.

    A bowl of Irish colcannon.

I love the taste of sauerkraut on mashed potatoes, so when I heard about Colcannon, a traditional Irish potato dish made with cabbage, I thought it would be fun to try.

It was so delicious!! Interestingly, it tasted much like the filling of pierogi, a very popular dish here in Pittsburgh.

    Substituions:

    • Any potato you like for making mashed potatoes works.
    • Substitute other greens like kale for the cabbage.

    • Whole milk or heavy cream can be used instead of half & half

This Irish colcannon recipe is so good. I will definitely be making this again. I might try it with a different green or other aromatics like chives and garlic.
