This Greek lettuce salad recipe is a perfect one to bring to the party with all the fresh flavors of Greek cuisine in one dish.

I made this to bring to a party recently, and everyone loved it. It's enough to feed about 12 people as a side option. However, I often make this for myself with grilled chicken for lunch. In that case, I would eat a double portion of the salad with the chicken for a nice hearty meal.

Ingredients
- romaine lettuce
- mini cucumbers
- red onion
- cherry tomatoes
- flat leaf parsley
- olives
- feta cheese

Making a Greek Salad
Most restaurants in Greece do not use lettuce in their salad. Instead, in a traditional Greek salad, you typically see only a feta, olives, tomatoes, and onions. They are very delicious, and I have enjoyed them, however, I do like a little extra crunchy lettuce in my salad. I usually use heads of romaine lettuce.

The other ingredients are pretty much the same. You could also add green bell pepper and cubes of feta instead of crumbled.
Here I've used cherry tomatoes, but you can use larger tomatoes and cut them up. I like to cut the cherry tomatoes in half so they don't pop in your mouth as you are eating them. I also like mini cucumbers, sometimes called Peruvian cucumbers, as they are extra crispy. You could sub them out with an English cucumber instead.

The dressing, which is mainly fresh lemon juice, is also very indicative of Greek cuisine. I keep it very simple with olive oil, salt, and pepper. However, you could also add a bit of oregano, either fresh or dried. Lastly, I love to add a little chopped flat leaf parsley. It has a great flavor that gives added fresh taste to the salad.

Greek Salad with Lettuce Recipe
Ingredients
- 3 heads of romaine lettuce, about 8 cups
- 6 mini cucumbers, about 3 cups sliced thin
- 1/2 red onion, about 1 cup, sliced and diced
- 20 cherry tomatoes, sliced in half, about 1.5 cups
- 1/3 cup flat leaf parsley, chopped finely
- 1 cup kalamata olives, pitted, about 4 ounces
- 1 cup feta cheese, crumbled, about 6 ounces
Dressing
- 2/3 cup fresh squeezed lemon juice, about 3-4 lemons
- 1/4 cup extra virgin olive oil
- 2 teaspoons coarse salt
- 1/2 teaspoon black pepper
Instructions
- Clean and chop the romaine lettuce into bite size pieces.
- In a large bowl, combine the lettuce with the cucumbers, tomatoes, feta cheese, onion, and parsley. Mix well.
- Make the dressing by whisking the ingredients together or shaking them up in a jar.
- Pour the dressing over the salad and toss.
