    Cucumber Bites

    Try these easy and simple cucumber bites for a healthy alternative to heavy appetizers or snacks. They taste delicious, and you can feel good about eating more than a few.

    When you are hosting a party or looking for a healthy snack, these cucumber bites are a good bet. They are low in calories, nutritious, and tasty. Plus, you can create a wide variety to keep it interesting.

    I'm using whipped cottage cheese with ranch seasoning (a new favorite) for an extra healthy option, but you can certainly put your own spin on it.  I also used English cucumbers because the skin is thin and does not need peeling.

    Ingredients

    • English Cucumbers
    • Cottage Cheese
    • Ranch Seasoning
    • Fresh Chives

    Making Cucumber Bites

    Step 1. Wash and slice your cucumbers. You can either use a regular kitchen knife or a mandolin for even slices.

    Tip: When slicing cucumbers by hand, try rotating the cucumber a little at each slice to help keep them evenly sliced.

    Step 2. Prepare the dip topping by whipping cottage cheese with a little ranch seasoning and a touch of water.

    Step 3. Place a dollop of the dip on the cucumber slices. Then sprinkle some fresh chives on top.

    Variations and Substitutions

    • Use regular cucumbers, peeled, scored, or left unpeeled.
    • Try mini cucumbers for a smaller bite.
    • Use sour cream, Greek yogurt, or a whipped cream cheese mixture instead of cottage cheese.
    • Use different fresh herbs, such as fresh dill, parsley, basil, or thyme, inside or on top of the dip.
    • Add slices of olives or jalapenos to the top.
    • Instead of a ranch and chive mix, try a Greek flavored cucumber bite as shown above. Here I used hummus with crumbled feta and a cherry tomato slice.

    No matter what type of cucumber bite you create, you are sure to make something delicious and memorable for all that you serve.

    Cucumber Bites

    This quick and easy cucumber bites recipe is tasty and healthy so you can feel good about eating them.

    Equipment

    • Food Processor or Blender

    Ingredients
      

    • 2 English Cucumbers
    • .5 cup Cottage Cheese
    • 1 tablespoon Ranch Seasoning
    • 1/4 cup Chives

    Instructions
     

    • Place the cottage cheese, ranch seasoning and a little water in a blender or food processor and blend until smooth but still thick.
    • Clean and slice the cucumbers into 1/4 inch rounds.
    • Place a little of the ranch and cottage cheese mixture on top of each cucumber round.
    • Sprinkle chopped chives over top.
