    Chicken Pinwheels

    These chicken pinwheels are a healthy, lower-calorie treat with a tasty homemade cottage cheese ranch sauce for dipping.

    I'm always looking for a good appetizer to serve for the family that's relatively healthy, and these chicken pinwheels did not disappoint.

    Ingredients

    • boneless skinless chicken breasts
    • light cream cheese
    • mozzarella cheese
    • fresh parsley
    • salt
    • black pepper
    • paprika
    • onion powder
    • low carb tortillas

    Dipping Sauce

    • cottage cheese
    • ranch seasoning mix
    • fairlife milk
    • lemon juice and zest

    Making Chicken Pinwheels

    Step 1. Cook the chicken breasts in some water with some herbs and spices. Use whatever you have on hand. I used some peppercorns, salt, a bay leaf, and some parsley. Bring the water to a boil and then turn down the heat and let it simmer for 15 minutes.

    Note: You could substitute rotisserie chicken or canned chicken and skip this step.

    Step 2. Make a spread in a food processor with the cooked chicken, cream cheese, mozzarella, parsley, and spices.

    Tip: Let the cream cheese sit out and get soft beforehand, to make it easier to blend.

    Step 3: Blend the ingredients until you get a nice chicken spread.

    Step 4. Spread one-quarter of the chicken mixture onto a low carb tortilla.

    Step 5. Roll up the tortilla tightly.

    Step 6. Cut off the ends and then cut the roll into three equal pieces. Repeat with the remaining chicken mixture and tortillas.

    Step 7. Place the cut pinwheels into a muffin pan that has been sprayed with cooking oil.

    Step 8. Bake in a 400 degree oven for 15 minutes.

    Step 9. Make a dipping sauce by blending together cottage cheese, ranch seasoning mix, Fairlife milk, and lemon juice.

    The bottoms will be nice and golden brown.

    Stack them up with a side of the dipping sauce. The result is a fairly hearty chicken snack that you can feel good about eating.

    You can also cut them in half and allow people to spoon some of the dip onto a plate for their own portion. So tasty!

    Chicken Pinwheel with Cottage Cheese Ranch Sauce

    Enjoy these healthy chicken pinwheels that can be dipped in a ranch sauce made from cottage cheese.

    Ingredients
      

    • 1 pound boneless skinless chicken breasts
    • 1/2 cup light cream cheese
    • 3/4 cup shredded mozzarella cheese
    • 2 tablespoons chopped fresh parsley
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon paprika
    • 1 teaspoon onion powder
    • 4 large low carb tortillas

    Dipping Sauce

    • 1 cup cottage cheese
    • 1.5 tablespoons ranch seasoning mix
    • 1/2 cup fairlife milk
    • 1/2 lemon juice and zest

    Instructions
     

    • Place the chicken in a pot covered with water and add some spices to the water, such as peppercorns, salt, and herbs. Bring to a boil, then simmer for 15 minutes.
    • Place chicken, mozzarella cheese, cream cheese, salt, pepper, paprika, chopped parsley, and onion powder in a food processor. Blend until all ingredients come together.
    • Spread 1/4 of the chicken mixture thinly onto a flour tortilla.
    • Roll up the tortilla and cut off the ends. Then cut it into three equal pieces.
    • Repeat with the remaining chicken mixture and tortillas.
    • Place the cut tortilla pinwheels into a muffin pan that has been sprayed with cooking oil.
    • Bake in a 400 degree oven for 15 minutes.
    • Allow the pinwheels to cool slightly before serving. Cut them in half for more bites. Serve with dipping sauce.
    • Make the dipping sauce by combining the cottage cheese, milk, ranch seasoning, and lemon juice in a blender. Keep the dipping sauce in an airtight container in the refrigerator until ready to serve.

    Notes

    You could substitute rotisserie chicken or canned chicken instead of cooking the chicken.
    You can substitute cheddar cheese for the mozzarella.
    Leftovers can be kept in an airtight container in the fridge for a couple of days and reheated in the microwave or oven
