This simple recipe for cottage cheese wraps is incredibly easy and gives you a nice alternative to bread with lots of protein and very few carbs.

We are always trying to eat healthy, at least some of the time. So when I heard about this idea of combining cottage cheese and eggs to make a wrap, I had to try it.
Using Cottage Cheese in Recipes
I'm not a huge fan of cottage cheese by itself, but I love the way you can use it in other recipes to increase the protein content and cut down on fats. My buffalo chicken dip uses cottage cheese instead of cream cheese. I also have a great healthy egg casserole that uses cottage cheese to beef up the dish.
Finally, I often whip cottage cheese with ranch powder and water for a tasty sauce to use as a condiment or flavor enhancer. Just combine one cup of cottage cheese with 1 tablespoon of ranch seasoning. Add a little water (~2 tablespoons) and blend. You can continue to add water until you get the consistency you like.
Making Cottage Cheese Wraps
This cottage cheese wrap recipe could not be easier. All you need is cottage cheese, eggs, and seasoning. I used 2% low-fat cottage cheese, but you could use full-fat or no-fat.
I also used everything bagel seasoning, but you could use any number of dried seasonings. Create the flavor to your own personal taste with onion powder, garlic powder, Italian seasoning, red pepper flakes, or just salt and pepper.
Blend up the cottage cheese and eggs in a food processor or blender.
They come together pretty quickly.
Pour the mixture onto a parchment-lined baking pan. Then spread it as evenly as you can with a rubber spatula. You probably could skip the parchment, but if you did, I would spray the pan with cooking spray first.
Then add your seasoning. The everything bagel seasoning was really good in this wrap.
Bake it in the oven at 350 degrees for 1/2 hour. Doesn't it look good?
Once it cooled slightly, I flipped it over so I could gently peel off the parchment paper.
It's pretty big, so I cut it in half with a pizza cutter.
To fill the wrap, start at the top third and add whatever sandwich fixings you like. Then roll it over on itself from the top to create a delicious wrap sandwich. In this case, I used turkey, onions, tomatoes, and lettuce.
I loved it! It has lots of protein (18 grams) and only 4 net carbs. Also, there's no gluten for those who can't eat gluten, or are sensitive to it.
It's another great way to use cottage cheese. Who knew?

Cottage Cheese Wraps
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1/2 teaspoon everything bagel seasoning or other dried herbs and spices you like
Instructions
- Combine eggs and cottage cheese in a food processor or blender.
- Process until smooth.
- Spread the mixture onto a parchment lined baking sheet.
- Bake in a 350 degree oven for 30 minutes.
- Allow the wrap to cool slightly before flipping it over on the counter or large cutting board.
- Start at one edge and gently peel the parchment paper away.
- Cut the wrap in half and start layering your lunch meat or any fillings on the top third. Then fold over to complete the wrap.
