These lemon blueberry bars feature a delicious shortbread crust, a tart lemon filling with the addition of fresh blueberries, and are a great dessert to feed a crowd.

I wanted to bring a treat to my daughter's house for a weekend visit. I knew her boyfriend/partner likes all things citrus, and she loves blueberries, so this lemon blueberry bar would be a good fit.
We were also meeting my other daughter and her boyfriend/partner there. She loves a good dessert, and he is a vegetarian, so I thought this would be something everyone could enjoy.

How to Make Lemon Blueberry Bars
Step 1. Start by setting the oven to 350 degrees and lining a 9 x 13-inch baking pan with parchment. If you don't have parchment, coat the pan with cooking spray.

Step 2. Whisk the flour, sugar, and salt together in a large bowl. Then mix in soft butter and vanilla. It should come together to form a dough when you squeeze it in your hands.

Step 3. Press the dough into the baking dish, then prick it all over with a fork.

Step 4. Bake the crust for 15-20 minutes. Then allow it to cool before adding the filling.

Step 5. Make the filling by beating the eggs in a medium mixing bowl. Add sugar, baking powder, and mix well. Then add the fresh lemon juice and zest. Lastly, fold in the blueberries.

Step 6. Pour the filling onto the cooled crust and bake for 30-40 minutes. Let cool for 30 minutes on the stove or counter. Then refrigerate for 2 hours to firm up.

I pulled mine out before refrigeration, which wasn't terrible, but they did a lot better after being refrigerated to firm up.

The taste was soooo good. They had a great flavor: sweet, tart, and refreshing with a buttery shortbread crust.

This one is a keeper. I'd like to try it with a peach filling next time.

- 1 cup butter softened
- 2 cups flour all purpose
- 1 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
Filling
- 1 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 cup fresh blueberries
- 2 cups sugar
- 4 large eggs
- 1 teaspoon baking powder
- 1/4 cup flour
Instructions
- Preheat oven to 350 degrees
- Line a 9 x 13 inch baking dish with parchment paper
- In a mixing bowl, whisk the flour, sugar, and salt.
- Add softened butter and vanilla, then work the mixture together with your hands to create a dough you can press into the bottom of the baking pan.
- Use a fork to prick holes all around the dough.
- Bake for 15-20 minutes.
- To make the filling, beat the eggs in a medium bowl.
- Add sugar, flour, and baking powder and mix well.
- Add lemon juice and zest to the filling mixture, stir, then fold in blueberries.
- Pour the filling over a cooled crust.
- Bake 40 minutes.
- Remove and let cool for 1 hour. Then refrigerate for 2 more hours to set up.
