Delicious hot dips are great any time of year but especially during the cooler months. What could be better than spinach and cheese? This one is similar to my cheesy artichoke crab dip but with spinach as the main ingredient.

    Options and Substitutions

    • Substitute the crackers and bread with vegetables such as celery and carrot sticks, broccoli florets, or sliced peppers for a low-carb version.
    • Substitute red pepper flakes or hot paprika for the cayenne pepper. Or leave it out entirely.
    • Try different blends of your favorite cheeses instead of Parmesan in the dip and a different melting cheese instead of mozzarella cheese.

    FAQs

    Can you use fresh spinach?

You can but you need a lot of fresh spinach to get anywhere near a box of frozen spinach. That being said maybe you don't care if there is a lot of spinach in your dip so that's up to you.

Can you make this a day ahead?

Yes, definitely. You can prepare it and keep it in the refrigerator for a day or two. Or you could bake it, let it cool completely, and refrigerate it. Then bring it out on the day you want to serve it. Let it sit on the counter for 20-30 minutes and reheat in the oven.

Can you freeze the spinach dip?

I wouldn't. It will get watery when you try to thaw and reheat it.

    Notes

You can set it under the broiler for more browning if you like.
You can make this a day ahead by placing the dip in the refrigerator and cooking it the next day.
Substitute your favorite cheeses for the Parmesan and mozzarella for a twist. Try gouda, gruyere, asiago, or any combo you like. Even a good cheddar would work.
Keep it low carb by serving it with vegetables like carrot and celery sticks and broccoli florets.
