    Blueberry Delight - A Delicious Easy No Bake Dessert

    This no-bake blueberry delight is the perfect dish to bring to the party or serve to a group of family and friends.

    Blueberries are delicious and known to have many health benefits. In addition, where I live, you can find them in the grocery store year round which means you can make this any time of year.

    Today's blueberry dessert is similar to the famous strawberry pretzel salad but with a graham cracker crust and a homemade blueberry filling instead of jello.

    This tasty recipe is also similar to a dish called blueberry lush or blueberry yum yum.

    What You'll Need

    • 1.5 cups graham cracker crumbs
    • 3/4 cup butter
    • (2) 8 ounce whipped topping (ie cool whip)
    • 8 ounce cream cheese 
    • 2 cups granulated sugar
    • 6 cups fresh blueberries
    • 1/4 cup water
    • 1 tablespoon fresh lemon juice
    • 2 tablespoons corn starch
    • extra blueberries and powdered sugar for garnish (optional)

    How to Make Blueberry Delight

    Step 1 - Make Blueberry Filling

    Make a blueberry pie filling by cooking berries, sugar, water, and lemon juice. Bring to a boil then simmer. Add in some cornstarch to thicken it. Finish with an additional cup of fresh blueberries for added texture.

    Allow it to cool slightly before popping the filling into the fridge to cool completely.

    Step 2 - Make the Crust

    Make a crust starting with crushed graham cracker crumbs. You can do this in a food processor or crush them in a plastic bag with a mallet. You can also buy graham cracker crumbs.

    In a 9 x 13 baking pan add melted butter and sprinkle the graham cracker crumbs over top.

    Step 3 - Make the Cream Cheese Layer

    Cream together whipped topping, sugar, and cream cheese with a hand mixer or a stand mixer.

    Then use a spatula to spread it evenly over the entire pan.

    Step 4 - Add Blueberry Filling Layer

    Pour the cooled blueberry filling over the cream cheese layer and then add drops of the remaining whipped topping before spreading it evenly over top.

    Complete dish of blueberry delight with a garnish of sugared fresh blueberries.

    Garnish with extra blueberries and a little powdered sugar if desired.

    Step 5 - Top with Whipped Topping and Blueberries

    Place the blueberry delight in the refrigerator for a least an hour to chill and set up or until you are ready to serve it.

    This large baking pan can easily serve 15 or more people.

    If by chance this yummy dessert is not totally eaten you can cover the pan with plastic wrap and refrigerate it for a day or two. Or if there's only a little left transfer it into an airtight container and place it into the fridge for a few extra days.

    Blueberry Delight Recipe

    Blueberry delight is an easy no bake layered dessert that easily serves 12 to 15 people. A great dish to bring to the party or serve to family and friends at home.

    Ingredients
      

    Crust

    • 1.5 cups graham crackers crushed
    • 3/4 cup butter melted

    Layer 1

    • 8 ounce whipped topping such as cool whip
    • 8 ounce cream cheese softened
    • 1 cup granulated sugar

    Layer 2

    • 3 pints fresh blueberries approx. 6 cups
    • 1 cup granulated sugar
    • 1/4 cup water
    • 1 tablespoon fresh lemon juice
    • 2 tablespoons cornstarch

    Layer 3

    • 8 ounce whipped topping
    • 1 cup fresh blueberries optional
    • 1 tablespoon powdered sugar optional

    Instructions
     

    • Rinse and pick through blueberries, tossing unripe berries and removing stems.
    • In a heavy saucepan combine 4 cups of blueberries, 1 cup of sugar, 1/4 cup of water, and 2 tablespoons of lemon juice. Bring to a boil and then turn down to low heat and simmer for 5 minutes stirring occasionally.
    • Sprinkle in 2 tablespoons of cornstarch and stir for a few more minutes until the sauce thickens.
    • Add 2 more cups of fresh blueberries and stir.
    • Set the blueberry sauce in the refrigerator to cool for about 30 minutes.
    • A few minutes before removing the berry sauce from the refrigerator melt the butter and spread it in a 9 x 13 inch baking pan.
    • Crush the graham crackers and spread them over the melted butter.
    • In a large mixing bowl cream together cream cheese, whipped topping, and sugar.
    • Place dropfuls of the cream cheese mixture on top of the graham cracker crust and spread evenly.
    • Then spread the blueberry filling mixture over the cream cheese layer.
    • Top the blueberry layer with 8 ounces of whipped topping and garnish with more fresh blueberries if desired. You can also dust it with a little powdered sugar.
    • Cover with plastic and set in the refrigerator to chill for an hour or more or until you are ready to serve it.
