    Summertime Black Cherry Crisp Dessert

    Bing cherries are my favorite summertime fruit. They are perfect on their own but are also wonderful in this black cherry crisp recipe.

    Summer is a great time to take advantage of all the great fresh fruit that you can find at the grocery store, your local farmer's market, or perhaps in your own backyard. We are lucky enough to have berries that grow wild around here. I made a wild black raspberry ice cream pie a couple of years ago.

    However, one of my favorites is sweet black cherries aka Bing cherries. They come from the Pacific Northwest. We eat them like candy. They have a wonderful sweet flavor and some say they may help with arthritis.

    One of the reasons you may be discouraged from putting fresh cherries in a pie is the pits. It seems like a messy difficult task. However, have you tried using a straw? Poking a straw through the cherry will easily remove the pit without sacrificing the flesh.

    How to Make A Cherry Crisp

    I like making fruit crisps of every kind. If I'm in a hurry I'll make a berry crisp because there's no cutting or seed removal required. However, sometimes you want to take advantage of your favorite fruit like delicious black cherries so you make the time.

    Either way, you need to make a topping for the fruit. I like to use oatmeal. Oatmeal is what distinguishes the dish from a crumble. In a crumble, the topping is just flour, sugar, cinnamon, salt, and butter just like a streusel topping. In a crisp, oatmeal is added to the mix. But hey, if you don't have oatmeal make it a crumble.

    On this particular day, I used quick oats which are just oats that are cut into small pieces. However, old-fashioned whole oats work just as well. Just combine the topping and dump it in the middle. Then spread it out to the sides.

    The result is a delicious homemade fresh cherry dessert that you can't get any other time of the year. Of course, you can serve it with a scoop of vanilla ice cream but it really doesn't need it.

    Black Cherry Crisp Recipe

    The cherry crisp recipe uses plump and sweet black bing cherries for a delicious dessert.

    Ingredients
      

    • 1.5 pounds black cherrries ~ 3 cups
    • 1/2 teaspoon lemon juice
    • 1/2 cup all purpose flour
    • 1 cup quick oats or whole
    • 1/2 cup brown sugar
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 1/2 cup melted butter 1 stick

    Instructions
     

    • Wash and pit cherries.
    • Roughly cut pitted cherries.
    • Mix lemon juice with cherries
    • Spray an 8x8 baking dish with cooking spray.
    • Toss in cherries.
    • In a separate mixing bowl stir flour, oats, brown sugar, cinnamon, and salt together.
    • Then add in the melted butter and mix until well combined.
    • Pour the crisp topping evenly over the center of the cherries heaping in the middle and spreading outward.
    • Bake uncovered in a 350-degree oven for 40 minutes.
    • Cool and serve alone with whipped cream or vanilla ice cream.
