This easy breakfast casserole with biscuits is a great dish to make for a holiday morning meal or when you are entertaining guests overnight. It's quick and easy, and makes 12 nice size portions.
If you have a big family breakfast casseroles come in handy. I also love them for holidays, such as Christmas morning, or those times when you are entertaining overnight guests. Often you can make them the night before, however, this one comes together pretty quickly so you don't have to.
Making a Breakfast Casserole with Biscuits
What You'll Need
- 1 can of refrigerated biscuits (8 pack)
- 2 cups of cooked chopped bacon (approx. 20 pieces)
- 2 cups of shredded cheddar cheese
- 10 eggs
- 1 cup milk
- salt and pepper to taste
Regulars biscuits from the refrigerator aisle are placed on the bottom of a 9 x 13 inch glass baking dish that has been sprayed with cooking oil.
Then you press the biscuit dough together with your fingers to make one giant biscuit.
Next, spread on a layer of cooked chopped bacon. I used a couple of packages of pre-cooked bacon and cooked them in the microwave until they were crispy and then chopped them up.
Follow with a layer of shredded cheddar cheese. Of course, you can use any shredded cheese that you like.
Then whisk up some eggs with milk and season with salt and pepper.
Pour the egg mixture on top of the bacon and cheese and then add some more cheese on top.
Bake in the oven for 30 minutes and you have a delicious warm and wholesome breakfast for 12 people to enjoy.
You can refrigerate the leftovers for a couple of days and reheat them in the microwave. However, I doubt that you'll have any leftovers at all.
Breakfast Casserole with Biscuits and Bacon
Ingredients
- 1 can of refrigerated biscuits 8 pack
- 2 cups of cooked chopped bacon approx. 20 pieces
- 2 cups of shredded cheddar cheese
- 10 eggs
- 1 cup milk
- salt and pepper to taste
Instructions
- Preheat the oven to 425 degrees
- Grease a 9 x 13 inch baking dish with cooking spray.
- Line the pan with the biscuits and spread them with your fingers to cover the bottom of the pan.
- Spread the bacon pieces over the biscuits.
- Sprinkle half of the cheese over the bacon.
- Whisk eggs, milk, salt, and pepper in a separate large bowl.
- Gently pour the egg mixture over the cheese layer.
- Top with remaining cheese.
- Bake for 30 minutes in the oven.
- Cool slightly and cut into 12 pieces.
