This creamy slow cooker white chicken chili recipe is warm and hearty and is a great one to serve on a Sunday game day afternoon or an easy dinner any day of the week.
Traditional chili is a favorite at our house. I make it quite often with beef and sometimes ground turkey. Recently I was looking for something to make with a few boneless chicken breasts so I thought I'd try making a white chili with chicken, white beans, and no tomato sauce. It was really good and tangy and since it was made in the slow cooker it was quick and easy too.
Ingredients
- boneless skinless chicken breasts
- onion
- bell pepper
- garlic
- chicken broth
- canned great northern white beans
- canned green chiles
- cumin
- ground coriander
- black pepper
- coarse salt
- smoked paprika
- ground cinnamon
- oregano leaves
- half and half
- sour cream
Instructions
Step 1. Place the chicken breasts, onion, pepper, garlic, chilies, and spices into a slow cooker.
Step 2. Add chicken broth and beans then cook on high heat for two hours.
Step 3. Remove the chicken and shred it with two forks.
Step 4. Return the shredded chicken to the slow cooker and add half & half and sour cream. Stir well. Continue cooking for an additional 10-15 minutes then keep it on warm until ready to serve.
Options and Substitutions
- You can use different kinds of white beans such as cannellini beans, navy beans, pinto beans, or chickpeas.
- I used hot green chilies but mild would still give the chili great flavor. Other options would be jalapeno peppers, fresh or pickled, poblano peppers, or hatch chilies. Just about any pepper would be good depending on your preference and heat tolerance.
- You can use rotisserie chicken but I would add it with the half & half and sour cream and serve once it was warmed through about 10-15 minutes.
- You can substitute heavy cream for the half & half or try evaporated milk.
- In a hurry? Skip all the spices and use 2 tablespoons of chili powder.
In my opinion chili is one of those meals that you can be very creative with by experimenting with different spices and ingredients of similar tastes. Consider having a topping bar for your family or guests. This way everyone can doctor their bowl up with heat or interesting flavors such as fresh cilantro while those who hate the flavor can opt out.

- 1 cup onion finely diced
- 1 cup bell peppers finely diced
- 2 garlic cloves crushed
- 1.5 cups chicken broth
- 2 15 oz cans great northern white beans drained
- 1 4 oz can hot green chiles
- 1 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon black pepper
- 1 teaspoon coarse salt
- 1 teaspoon smoked paprika
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon dried oregano leaves
- 1/4 cup half and half
- 1/3 cup sour cream
Instructions
- Place the chicken, onions, garlic, peppers, chilis, and spices into a slow cooker.
- Add broth and beans then cook on high for 2 hours.
- Remove chicken and shred.
- Return the chicken to the slow cooker.
- Add sour cream and half & half. Stir.
- Keep warm until ready to serve.
- Serve with fresh limes, cilantro, chopped onions, shredded cheese, broken tortilla chips, or any other toppings you enjoy with chili.
