    Smashed Zucchini - An Easy and Delicious Side Dish Recipe

    This smashed zucchini is a great way to use up your zucchini harvest and make a delicious side dish to any meal.

    I'm always looking for new ways to cook zucchini for two reasons. One, we love it, and two it's a big crop in the summer for anyone who grows it or knows someone who grows it.

    So after having some delicious smashed brussels sprouts, I decided to try making smashed zucchini. After all, zucchini can get a little mushy when cooked and this was a good way to make it crispier.

    Ingredients for smashed zucchini including melted butter, shredded Parmesan cheese, salt, black pepper, red pepper flakes, garlic and zucchini.

    How to Make Smashed Zucchini

    Ingredients

    • fresh zucchini (approx 16 ounces)
    • melted butter 
    • garlic clove
    • salt
    • black pepper
    • red pepper flakes
    • shredded Parmesan cheese

    Step 1 - Make Garlic Butter

    Crush a garlic clove into some melted butter or extra virgin olive oil.

    Step 2 - Prep and Cut Zucchini

    Wash the zucchini, cut off the ends, and slice into 1/4-inch rounds.

    Step 3 - Season and Place Zucchini on Baking Sheet

    Place the zucchini in a single layer on an oiled baking sheet and brush the tops with the garlic butter. Then sprinkle on salt, pepper, and red pepper flakes. Flip the zucchini and repeat.

    Step 4 - Bake Zucchini

    Bake in a 375 degree oven for 20 minutes.

    Step 5 - Smash Zucchini

    Remove the baking sheet from the oven and smash each zucchini with the bottom of a glass.

    Smashed zucchini with shredded Parmesan cheese on top.

    Step 6 - Add Parmesan Cheese

    Sprinkle with Parmesan cheese and return to the oven broiler.

    Step 7 - Broil Zucchini

    Broil for approximately 5 minutes or until the cheese starts to bubble and brown.

    Serve with your favorite entree or alone with a salad. It's mmm mm good.

    Ingredients
      

    • 3 zucchini about 1 pound
    • 1/4 cup butter melted or extra virgin olive oil
    • 1 garlic clove
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons red pepper flakes
    • 1/2 cup shredded Parmesan cheese

    Instructions
     

    • Crush garlic into the melted butter. Set aside
    • Wash and cut off the ends of the zucchini
    • Slice the zucchini into 1/4 inch rounds
    • Place the cut zucchini in one layer on a baking sheet that has been sprayed with cooking oil.
    • Brush each zucchini with the melted garlic butter.
    • Flip and brush with more garlic butter on the other side.
    • Sprinkle salt, black pepper, and red pepper flakes on top.
    • Bake at 375 degrees for 20 minutes.
    • Remove the baking sheet from the oven and smash each piece of zucchini with the end of a cup.
    • Sprinkle the entire sheet with Parmesan cheese.
    • Return the baking pan to the oven and place it under the broiler until the cheese is browned and bubbling, about 5 minutes.
    • Serve immediately on a platter.
