Chicken & Black Bean Casserole
One of my "go-to" dinners is this chicken black bean casserole. Like so many others, my family really loves Mexican food. It's the one thing we can usually all agree on when choosing a restaurant.
Several years ago I found a recipe for a black bean tortilla casserole in a magazine. Originally, it was a vegetarian recipe but I've been adapting it with chicken and a few other ingredients for an easy dinner option.
Stuffed Cabbage Roll Casserole
Growing up in Southwestern Pennsylvania means having had your share of stuffed cabbage rolls. It’s often served during the holidays or other family celebrations like graduations and weddings. Sometimes referred to as Halupki, this delicious comfort food is something everyone loves.
Chili Mac Casserole
Hearty chili and pasta is a no-brainer combination. I really don't know the origins of Cincinnati Chili but it's a pretty big deal there where they serve chili on top of spaghetti.
We prefer small pasta, specifically elbow macaroni and have been eating it this way for years.
Leftover Turkey Casserole
On Thanksgiving, we cooked a 19-pound turkey and had a lot of leftovers. That's great and it made some excellent sandwiches, and some of us had a second Thanksgiving dinner plate the next day. Still, I hated seeing all that yummy turkey go to waste, so I made a casserole with thin egg noodles, porcini mushrooms, and fresh English peas.
The Ever Expanding Lasagna Recipe
The name “ever expanding lasagna” comes from one of my oldest and dearest friends. When she moved into her first home, I brought her this lasagna recipe so that they wouldn’t have to worry about cooking a meal that day. Later she told me how much they liked it and its magical properties of expansion.
Tuna Noodle Casserole from Scratch
I've made tuna noodle casserole many times with canned soup as the base. However, I wanted to make one with a homemade sauce. It was so easy, and I can't believe it took me so long to try it.
I always use egg noodles for this dish. In the past, I also would have used tuna packed in water, but this time I tried one packed in oil. Just so you know this is a little on the rich side, but I bet it would be tasty without the oil.
Easy Vegetarian Lasagna
Sometimes you just need something quick and easy to make for dinner. I found this recipe for a quick vegetarian lasagna many years ago from a magazine and have made it so many times I don't even need to refer to the recipe. It helps that it is so simple and uses items you are likely to have on hand.
Moussaka - Eggplant Casserole Comfort Food
I’m sure many of you have eaten, or at least heard of this eggplant casserole known as Moussakka. It’s great any time of year, but certainly when eggplant can be picked fresh from the garden, or bought at the farmer’s market. This recipe comes from my mother. I have a piece of yellow ruled paper in my recipe […]
