Ingredients You'll Need
I made it with pre-cooked chicken, cooked rice, and steamed broccoli. That makes it a great recipe for leftovers even though this one was not.
- cooked rice
- 2 cups cooked chicken chopped
- 2 cups steamed broccoli chopped
- 1 can cream of mushroom soup
- 1/4 cup water
- 2.5 cups shredded cheddar cheese
- salt and pepper to taste
- dash of cayenne (optional)
Substitution and Option Ideas
- I used cream of mushroom soup but any cream of soup would be great in this dish.
- Green beans, peas, cut up asparagus, are all great substitutions for the broccoli.
- Try shrimp or cooked ground beef for the protein.
- I used nice cheddar for the cheese but the choices here are many.
- Add in any spices that your family likes for extra flavor. I put a dash of cayenne pepper in this one but I think onion and/or garlic powder would also be tasty.
It all gets mixed up together and spread into a baking dish.
I really don't think you can go wrong making it your own. You could even leave out the chicken and make a broccoli cheese casserole for a great side dish.
This casserole makes comfort food that's easy to throw together. The perfect dish to bring to a new neighbor, a sick friend, or someone who recently lost a loved one.
Of course, like many casseroles, it tastes great the next day. Maybe even better.

Chicken Broccoli Casserole with Cheese and Rice
Ingredients
- 3 cups cooked rice
- 2 cups cooked chicken chopped into bite-sized pieces
- 2 cups steamed broccoli chopped
- 1 can cream of mushroom soup 10.5 ounces
- 1/4 cup water
- 2.5 cups shredded cheddar cheese
- salt and pepper to taste
- dash of cayenne optional
Instructions
- Preheat oven to 350 degrees
- Stir all ingredients in a large bowl reserving 1/2 cup of cheese for topping.
- Spread the mixture into a 9 x 13 casserole dish that has been sprayed with vegetable oil.
- Sprinkle remaining cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 10 minutes.
- Remove and serve.

We do a similar recipe in a skillet on top of the stove with ground beef & sausage. We cook up ahead of time our ground beef & sausage with onions & seasonings (3 lbs ground beef to 1 lb ground sausage), drain, bag in 1 cup quantities, freeze for fast meals for two. I make this a lot when I have leftover rice in the frig.: 1 pkg meat, 1/2 cup rice, green beans or bell peppers add cheese at the end to melt on top. Cut up onions for topping. Takes about 15 minutes with meat & rice already cooked.
We mix ground sausage & ground beef to add a better favor to our meat, we got tired of our ground beef tasting like filler. I use mild Italian sausage sometimes spice it up with the hot Italian.
